Lomo Saltado (Peruvian Steak and Fries Stir Fry)

Lomo Saltado is a Peruvian Steak & Fries dish, enjoyed all over Latin America #bigmamacooks #lomosaltado

Ingredients:
2 lb pepper steak (thin slice top round steak)
1 tbsp garlic paste
1 tsp cumin
1 tsp black pepper
2 tbsp low sodium soy sauce
1 tbsp Aji Amarillo paste (mild hot heat) (it’s a Peruvian Chili Paste, Google it for more info- I love it!)
2 tbsp oil
2 Roma tomatoes
1 red onion
French fries
Cilantro for garnish

Peruvian here: if you don’t remove the meat it overcooks, you have to cook it separately and then mix it in.

You need to use way more tomatoes, also take out the meat while you cook the veggies, if you don’t it’s going to be dry and over cooked, only mix it in once the veggies have been properly cooked
