I believe the yolk wasn't dehydrated enough. The smaller cured yolks are usually left to dry for a day or two before use. Give it 3-4 days it will probably grate and cover the meat better

Try hang drying the yolk in some cheese cloth for 4-5 days after it's salt cured, I just finished a batch of yolks myself and it makes it much easier to grate.
