Warming up the pita bread will make it a lot more flexible. What you have looks really fresh, probably cooked the same day and not necessarily dependant on this technique, but most people won't have access to such fresh pita bread, depending on their geolocation, but just warming the bread in a pan or folding toaster for 10-20 seconds it will change the bread's flexibility a whole lot.

A shawarma costs minimum $10 with standard price being around $13-$18 per piece here so buying 140 pieces is already $1820-$2520. I am envious that you can eat out for that cheap. Just as a sidenote just the price of 30kgs of raw chicken here is about $450 so not even counting all the other ingredients and the time spent to prep and cook the shawarma it costs more than just buying the completed shawarma there. lmao
