I went from 390 lb x 3 reps on deadlift one week to failing 395x1 the next two weeks in a row! WTH! So frustrated

In some cases I'd change the workout. I'm training muscles, not lifts.
The tricep extension would be better with Independent grips moving along the sagittal plane.
The bicep curl would be better if you sat on the bench and allowed the biceps to fully stretch.
Just makes sure you're training to the same level of intensity, although this may be something you can only gauge from experience. Beyond that, substitute some of your workouts with forced eccentrics at a heavier weight to force yourself to adapt beyond the point of concentric failure.
