Nice one. A small tip tho, that is actually not the best way to take the maximum flavor and color out of saffron. As Persians do, soaking it in warm water or using ice cubes on top of it gives you a better result.

You can prepare them the same with fresh water fry/minnows too, catch them in one of those kiddies fishing nets and you are laughing. They taste exactly the same floured and fried. The head is always the best crunch.

Personally for that size of whitebait (large) I would be cooking them much longer because you need them crispy but also you need the guts and bones to be cooked through. When you pulled them out there was too much water still in the fish because the oil was still bubbling vigorously. Just my personal preference if you want crunchy well cooked whitebait.

I ate some great whitebait in Prague, pairs well with a jug of Pilsner Urquel. Coincidentally, that was about the time this video was posted.

You obviously don't need to follow up on that suggestion (what do i know right;)), but I think it would do wonders for your popularity. And who doesn't want to be populair? ;)

In summer here in Weymouth I can just scoop those out of the sea by the BUCKET load, the mackerel chase them in and they beach themselves trying to escape (you can just go along with a carrier bag and fill it)
