🍳🌿 DELICIOUS SILVERBEET (OR CHARD) WITH EGGS RECIPE 🍳🌿

INGREDIENTS

Large bunch of freshly picked silver beet or chard (Nick uses the "Bietola" Italian variety)
1 - 2 cloves of garlic, chopped
Olive oil
3/4 cup water
1/2 cup grated cheese (Parmesan, Grana Padano or Pecorino)
4-6 eggs (one egg per serving)
Salt and pepper

METHOD

Wash the silverbeet well. Drain. Trim the thick stalk from the leaves and discard. Roughly chop the silverbeet in large sections.

Place a drizzle of olive oil in a large frypan over medium heat. Add half the silverbeet and allow it to wilt down slightly. Add the garlic. Add the second half of the silverbeet. Cover with a lid to steam the spinach for 30-60 seconds. Remove lid. Add 3/4 cup of water. Add a pinch of salt. Crack eggs into the pan allowing for space between. Sprinkle over grated cheese. Add cracked black pepper.

Cover with lid and steam for 10 minutes. Cut up into individual portions and serve.

Absolutely delicious with crusty bread or on toast.

Yum!!!! My Nonno passed away when I was a baby. You are what I imagined he would have been like. He loved his veggie gardening as much as you do. He grew up in Northern Italy in Treviso and came to Australia in the late 50's and worked on the sugar cane farms in Queensland before settling in Sydney. Nick, where abouts in Australia are you from? Going off your awesome produce I would guess Queensland? I hope you have a nice day! From Paul
