I make dak-galbi quesadilla for myself and my friends and it never fails.
Mix equal parts of soy sauce, go-chu jang, sugar, mirin (you can replace with any cooking wine), minced garlic, hot pepper flake (can be replaced with things like cayenne pepper/paprika) that is enough to marinate your whole food. Koreans love garlic, don't go easy on garlic!

Get some chicken thighs, cut up some onions, green onions, hot pepper (I just use jalapenos), marinade with the sauce above and cook em thru, and after its fully cooked you can also give it a touch of sesame seeds and sesame oil, black pepper. Then you get some tortilla, cheese and preferred sauce of your choice (I just have sour cream/plain yoghurt).

If you just want to make some dak-galbi instead, drop the tortilla part, chop up some potato, cabbage, and maybe welsh onion and perilla leaves if you can find them. Then put that chicken mix and cook it. Cabbage is lowkey mandatory in this case because you need moisture, but if you just can't find it then just replace with some water and extra sauce. Cook until potatos are tender. Eat it with rice, if you want you can also add some cheap cheese to make it cheesy, sweet, spicy meal

I have a local joint that makes something similar to this. And they also have beef bulgogi burritos. Best bulgogi I've ever had in my entire life. The place has a flawless 5 stars online for a reason lmao.

Edit: for those wondering the location. The place I'm talking about is called Gogi On The Go in the Federal Way, WA area. It's a local spot so I doubt you'll find it anywhere else. If you're in the area though it is definitely a MUST GO.
