I made a non-dairy version of these last night. I replaced the heavy cream with 1 can of full fat coconut milk and replaced the whole milk with almond milk. I also used 1 T. arrowroot powder to thicken the mixture. After the pudding mixture finished cooking, I added 1/2 cup chocolate chips and stirred them in until melted. My fudgesicles have the creamiest texture ever! My husband, who is not fond of coconut could not tell that they were non-dairy and could not detect the coconut. It's funny that this video just appeared yesterday as I had just purchased a set of popsicle molds earlier in the day. Great timing!!

I make a chocolate custard using egg yolks instead of cornstarch. Cook until it covers the back of the spoon, cool slightly, then pour into molds. I promise a real custard will make an even more spectacular fudgsicle.

Delish...Can do Neapolitan style by laying down by laying down plain, then chocolate, then strawberry into the molds. I think I shall try this :)

I am wondering if you can substitute the whole milk and heavy cream for lactose intolerant folks. Any suggestions?
