Can you skip the wine in the marinade? I really want to make this in the college dorm but of course we can’t have any alcohol. Or are there any alternatives? I have used diluted wine vinegars to deglaze pans. Thank you so much this looks delicious!

I LOVE GARLIC so this is right up my alley. A better way to skewer the meat is go from the bottom that way the meat won't splinter the bamboo skewer. Or they can be soaked.

This should be a brine that's boiled and cooled. This will lead to a much juicier chicken breast.

nice dish ...but I gotta eliminate the 'white wine' for the sauce ... it's forbidden ingredient for Islamic halal foods, ... in Indonesia🇮🇩 we have similar skewed chicken like this, called 'satay' 🍢, ... with spicy peanut sauce as garnish ...
