I’m currently looking for decent editors for a new channel and I also agree. It’s so hard to find decent editors because everyone is generic and often many use the same style and techniques and are just one trick ponies. Adaptable editors with a variety of styles is rare. Good editing is not just ‘technique’ but involves skills like pace, storytelling etc.

and my input is, it's about to give VALUE! Make the videos for free before you even ask to work for free. make 3-5 or even more videos. make shorts, include thumbnail. Then reach out to the client you want to work with. Give them the material for free. They didn't take any risk at all and see you really want to work with them. i did it myself with 0 experience.
