Sous Vide Short Ribs

RECIPE:
2.5lbs short ribs (English Cut)
10 cloves garlic (whole)
1/2 medium onion (large chop)
1c dry red wine
1c beef stock
2 big springs thyme
2tbs soy sauce
2tbs maple syrup

Optional:
1tsp coriander
1/2tsp cinnamon

GREMOLATA:
1/2c parsley (chopped)
2tbs lemon zest (grated)
2 garlic cloves (grated)

- Season the short ribs very heavily with salt and pepper
- Sear on all sides then remove
- Sear your garlic and onions until caramelized
- Add the wine, stock, thyme, soy, spices and maple syrup
- Vacuum seal it all, CAREFULLY, and sous vide for 4.5 hours at 190.

- Strain the sauce, remove the fat, and reduce until syrupy for your glaze.
- Serve with mashed potatoes or grits! (:

Sujestion: next time lower the temp to 145°f and leave them in the sous vide for 40-48 hours. Thank me later.

Consider freezing your marinade into ice before putting it into the vacuum bag. Then when you're sealing it, the ice will stay in place. You can melt the ice before fridging it to marinate, or you might not need to pre-marinate if you're doing a long slow cook with sous vide.
