YOU'RE INVITED TO THE CARNE ASADA: The Best Carne Asada Recipe/Plus a Special House Warming/Blessing

You're invited to the Carne Asada! It's our official house warming get together, now that we're all moved in to our new home in New Mexico. But there's a few things you should know first. "Carne Asada" is Spanish for Grilled Meat, but a "Carne Asada" could also mean a cookout. And, if someone says "you're invited to the carne asada" that has yet another meaning. It means you're "gente" or my kind of people. It's the ultimate compliment, as you're the type of people worthy of hanging out with. In this video, I combine all three, as share a recipe AND invite you to join our special celebration, virtually.

Read on for my recipe for Carne Asada Marinade which can be used for any type of meat. I'm using 5 1/2 lbs. of skirt steak, so this makes a lot of marinade. Be sure to cut the ingredients in half for a smaller portion, and keep in mind, it goes great on beef, chicken, or pork.

Carne Asada Marinade:

the juice of 4 oranges (save the peelings)
the juice of 6 limes (save the peelings)
1 cup of olive oil
1/4 cup of soy sauce
1/4 cup of apple cider vinegar
6 garlic cloves
a small bunch of chopped cilantro (to your liking)
1-2 Tbsp. of New Mexico red chile powder
1 Tbsp. Mexican oregano
1 Tbsp. ground cumin
1 tsp. black pepper

Whisk all ingredients together until well combined and set aside. Place raw meat in large Ziplock bag or bowl. Pour marinade over meat and include some of the orange and lime peelings. Make sure meat is completely coated with marinade. Seal bag or cover bowl with saran wrap and place in refrigerate to marinate for 4 hours to overnight, depending on meat. Less time is required for more tender meat. Skirt steak, for example, needs less time. Chicken is best marinated overnight.

When ready to grill, bring meat to room temperature before placing it on the grill. Do not overcrowd. Cook to your desired level of doneness. (In this video, I only cooked the skirt steak for 5 minutes on each side, so that it would be medium rare.) Remove from grill and let stand for 10 to 15 minutes before cutting into it. If using skirt steak, be sure to cut against the grain. And enjoy!

A couple weeks ago I flew down to El Paso, rented a car, drove to Hatch, bought a bushel of HOT chiles, peeled/bagged/froze them in my Las Cruces hotel, then drove them back to Portland, OR. So now when you go to your freezer for chiles, I go to my freezer for chiles‼️ I did that all because of your recipes 😋🌶️

Marcy...oh my! You were right when you said the kitchen was "beautiful" and described it---like someone knew just what you wanted.
