1 Dragon fruit cut into wheels
1 cup granulated sugar
½ cup water

Prepare Dragon fruit: Skewer the dragon fruit wheels and set them aside.

Make the Syrup: In a saucepan, combine sugar and water. Cook over medium heat without stirring until the mixture reaches 300°F (hard crack stage) on a candy thermometer. You can swirl the pan gently to ensure even cooking, but avoid stirring.

Dip the Dragon Fruit: Quickly dip each dragon fruit skewer into the hot syrup, making sure the fruit is evenly coated.

Cool: Place the coated dragon fruit skewers on a parchment-lined baking sheet and allow them to cool and harden.

Serve: Once the coating is hard and shiny, they’re ready to enjoy!
