When making your shrimp stock later, remember you only need to boil it for 10-15m. After that you actually start cooking the flavor away

Tip/warning from someone who works with hot peppers: sometimes the capsaicine (the spicy chemical) goes through the gloves. If you cut a lot of super hot peppers, even when wearing two layers of gloves and washing your hands several times, your eyes and other sensitive parts might still be on fire when you touch them.

If you struggle to get that poop line out, try using a toothpick. It’s what we used in culinary! FYI for anybody.

I had a buddy in college whose family was from Argentina. He loved cooking. He didn’t believe peppers would burn anything. Dude took a handful of my dried habaneros, crushed them up, then stuck his hands down his pants. He literally ran from our apartment to his upstairs and was in the shower for close to an hour. How he managed to survive to have kids and a wife is beyond me lol

Tip for spicy peppers (eating, not cooking): Sugar counteracts capsaicin. Even the lactose in milk can help

I learned the chili one the hard way 😫 I must have been like 11 or 12 all excited to make my first salsa and I didn't wear gloves cause they were too big I was like "I'll be careful I'll be careful" with as careful as little me was and washing my hands after... I learned 1 wash DOES NOTHING!!! Later that night I'm rubbing my eyes and OMFG my eyes were blood shot red almost the whole next day

I grew Carolina Reapers last year. I did not wear gloves when harvesting. Forgot to wash my hands and rubbed my eyes. That's the type of pain I wouldn't wish on my worst enemy.

Learned from a Cuban delivery driver when I worked at a Chinese restaurant. Use cooking oil or olive oil on your hands when handling peppers if gloves aren't available.

I've pealed a lot of shrimp in my life. Thank you for telling people to remove both dark lines. 😂

I once made the mistake of working with a reaper without gloves and even though I had washed my hands many times before going to the bathroom it was useless. That’s a pain you really don’t wanna be feeling. 😅
