How to bake even cake layers

Slicing into a cake with perfectly proportioned layers and frosting is a sight to behold. But how do you get those layers to be so exact? One simple trick ensures that your layers are evenly sized. Watch the steps in our video and learn the technique.
Instructions: Place a mixing bowl on your digital scale and press tare. Fill the bowl with your cake batter, and then weigh the bowl again.
Calculate half the weight of the batter: This is the amount you want in each pan.
Spray two non-stick cake pans with oil, and place a round of parchment paper in the bottom of each pan.
Place one empty cake pan on the scale, and press tare. Pour half the cake batter, by weight, into the pan. Repeat with the remaining batter and pan.
If necessary, adjust the amount of batter in each pan until they’re exactly equal.
Use an offset spatula to smooth the top of the batter in each pan.
Bake according to your recipe.
