never thought about making jalapeno poppers in the shell... great idea. like your trick with the ends.. another good tip. I KNOW WHAT I'M MAKING. LOL those came out real nice.

Best way I have found to stuff the shells is using a jerky cannon. Works great!

I got a tip for you you should refrigerate those overnight That way the manicotti shells will be a little soft before you smoke them on the smoker

Next time, cook your pasta in water for about 1/3 the called for boil time. Then proceed with stuffing them. They will be much more tender, and you won't see that white line in the pasta that indicates a undercooked pasta. But great spin on shotgun shells!

well like bart said, if you make them the night before it will shoften up the shell or you could just boil the shells for about 5 to 10 mins, thats how i been doing them. but i think i am going to try barts way and make the night before. as i said before nice trick with the ends. have a great day. (HAVE TO GO AND MAKE SOME JALAPENO POPPERS IN THE SHELL) LOL

not sure how much boudin is accessible around the US, but the first time i made these i did it with sausage on some, and boudin on the others. The boudin doesnt form as much as the sausage, and it also doesnt shrink. I feel like it helps give a better consistency.
