There are 3 theories:

1) The ghasts used to be in the overworld and stay peaceful.

3) There was once an ice age in the nether where the ghasts drunk water and ate snowballs.

Here's some made up lore:


Once, the Aether and the Nether lived in harmony. United with one portal to each dimension. The overworld creatures knew nothing of either dimensions. So, when players known as Steve and Alex ventured into the Nether, killing each and every mob that stood in their way, the Aether sent Ghasts to protect the nether, but too much was gone and the players were getting close to the Aether portal. So, the Aether closed off the portal, hiding away and breaking off any connection that it held. The nether broke in anger, fire bubbling to the surface, Piglins no longer running, but killing the players as much as they could. The Ghasts sent went feral, realizing it was all the players fault. So, whenever seen, shoots fire, since it was the only thing they could consume, at every player seen. But for the Aether portal? Well, they were the ones who created water, leaving it behind in the overworld and glowstone leaving in the nether, so that someday, someone would put the pieces together. For the Ghasts, however, is a different story. Some Ghasts fled to the overworld, hiding away, but the monsters didn't quite like that. They murdered the grown adult Ghasts and spared the babies. Piglins went all over to search for the babies and once they found all of them, took them to the nether again. Now, these animals grew in the overworld, thrived in the overworld. So once in the nether, they became dry, tired, thirsty. They missed the overworld.

In short, we are the monsters who terrorize this world of ours. It was first Alex and Steve, but we made everyone grow to that hatered.

There is a mod explorercraft mod which adds ender ghasts, ghasts for the end, those might be ghasts from nether stuck and corrupted by the end

The ghast is a aquatic animal and you can see its gills. Thats why you have get them wet before you tame them. They have dried up tears under their eyes. There is a reason why a happy ghast is a thing, its because they weren't happy before. They are literally found in the skeleton of their mother.
