MALVA PUDDING | Sharing a popular South African dessert with you
In this video I show you how I make Malva Pudding, a traditional South African dessert. This spongy, caramelised goodness can be enjoyed with warm custard or whipped cream.
Full Recipe:
Ingredients
Pudding:
1 cup sugar
1 tbsp unsalted butter (melted in microwave for 30-45 seconds)
¼ cup smooth apricot jam
1 egg
250ml (1 cup) milk
2 tsp vinegar
1 tsp vanilla extract
150g (1 cup) flour
1 tsp baking soda
Pinch of salt
Sauce:
60 ml (¼ cup) hot water
250ml (1 cup) heavy cream
½ cup sugar
100g (7 tbsp/½ cup butter)
Directions
Pudding
Preheat the oven to 180℃/350℉ and grease a baking dish.
Beat 1 cup of sugar, 15g of butter, jam and egg until pale and fluffy.
Mix the milk, vinegar and vanilla extract in a separate container.
In another bowl, sift together flour, baking soda and salt and mix well.
Fold in the flour mixture and milk mixture into the egg mixture until thoroughly combined.
Pour into baking dish (optional: cover with aluminum foil) and bake for 40-45 minutes until firm.
Sauce:
In a saucepan, combine the sauce ingredients over medium and bring to a boil.
Once the pudding is done, remove from oven and pour sauce over. Let it stand for a few minutes before serving.
Serve with custard or lightly whipped cream.
