Depending on what you are cooking you may get away with just wiping the pan out with paper towels, but when you have burnt on food this is an easy way to clean your pan.
Don't worry about removing some of the seasoning in small areas as this very quickly returns next time you use the pan.

I always scrub my pans with bar keepers friend after each cooking session then do what he does. Warm the pan, drop a few drops of cooking oil, coat the pan with a paper towel and wipe off any excess oil. Ready to store for next time. Great video: clear, clean and to the point

Be careful with those green Scotch Bright scouring pads, they will take off the seasoning. I lightly wiped my Matfer pan with one and it took it down to the metal. I do use the hot water method of cleaning burnt on food though. Works well after the pan is well seasoned. Chainmail works well too. I use mine on my cast iron pans. Have not needed it on my carbon steel yet.

Great video. It works great, but will take some of the seasoning off. Try kosher salt and a cheap oil of your choice while apply heat on the stove. The kosher salt acts like a abrasive and the oil acts similar to water in losing up the burnt on pieces. It cleans and re seasons the pan. Rinse in the sink or wipe with a paper towel when done and you have a clean re seasoned pan.

Try a chain mail cleaner instead of the scotchbrite pad. It doesn't remove the seasoning while still getting rid of stuck on food in no time. And there's nothing wrong with using a little dish soap when necessary. It won't harm the seasoning at all. But due to it removing all oil from the skillet, don't forget to reapply a thin layer of oil afterwards to protect it from rust.

I simply carved my pan with a steel fiber and cold water and now is silver color :I

Quite an expensive way to cook, having to use electricity/gas several times to clean it. Isn't stainless steel a lot less hassle & expensive?
