How to Cook Dan Dan Noodles | Sichuan Food at Home Like a Pro | Naz It Up

Dan Dan Noodles are one of very popular noodle dishes from Sichuan cuisine. It is a fiery, tongue-numbing and outright explosive noodle dish. Usually Dan Dan noodles are cooked with minced pork however I have used minced chicken to go with the noodle dish.

First cook the chicken in a wok. Drizzle some oil in a heated wok and add crushed garlic and then add the chicken. Stir for a minute and then add soy sauce, black pepper and five spice powder. Mix well and then add pickled mustard greens. Mix well and set aside.

In a separate pot boil water and cook the noodles for around 7 min. Then add Bok Choy to the boiling noodles for around 2 min. Drain noodles and bok choy and set aside.

This is the final stage of assembling Dan Dan noodles. In a serving bowl add sesame paste, chilli oil, soy sauce, chinese black vinegar, crushed garlic, sugar, salt and water from the cooked noodles. Mix well and place noodles over it, followed by the chicken and bok choy. You can garnish the dan dan noodles with sesame seeds, cilantro or spring onions and crushed peanuts. You can also pour over a drizzle of homemade chilli oil if you like it extra hot.

Recipe for Dan Dan Noodles (Serves 4)
Cooking time 30 min

Ingredients
350 gm Noodles
350 gm Minced meat
2 tbsp Cooking Oil
2 Garlic Pod
1 tsp Black Pepper Powder
1 tsp Chinese 5 Spice Powder
2-3 Baby Bok Choy (or Broccoli or Gai Lan)
250 gm Pickled Mustard Greens (Sui Mi Ya Cai)

Dan Dan Noodles Sauce (per serving bowl)
1 ½ tbsp Sesame Paste
½ Sichuan Peppercorn (crushed)
1 ½ tbsp Chinese Black Vinegar (Chinkiang)
2 tbsp Homemade Chili Oil
2 tbsp Light Soy Sauce
1 Garlic Pod
Salt (to taste)
½ tsp Sugar
Sesame Seeds (garnish)
Spring Onions or Cilantro (garnish)
Crushed roasted peanuts (garnish)
