Can I reuse the soil after harvesting all of the microgreens? If so, do I need to take out any old roots?

Okay you seem like you know what your doing, I'll ask you my question. This is for Outside. If I've put out my tray of dirt, added my seeds and a little more soil and misted the tray. Here's the question Do I need to cover the plant for 3-4 days? This seems like a waste of time if they are covered with dirt anyway. I guess cover to keep the rain off which will wash seeds away. TIA
