Easy Breezy Vegetarian Macrobiotic Health Bowl (Nutritious Weekday Fun Time)

Recipe:
Makes 2 bowls
Tahini Vinaigrette:
1/4 cup olive oil
1/4 cup tahini
4 teaspoons rice wine vinegar
4 teaspoons tamari
4 teaspoons red wine vinegar
1 cup brown rice, cooked according to the package instructions
1 egg (or more if you want to have more cooked eggs lying around)
a squeeze of lemon
a pinch of nice salt
1 can chickpeas, drained and rinsed (you'll only need about half of the can)
1 sweet potato, steamed and cut into bite sized pieces
1 cucumber, cut into bite sized pieces
1 avocado, peeled and sliced
1 carrot, grated
1/4 head purple cabbage, shaved
2 tablespoons of finely chopped soft herbs, like cilantro or parsley
Hot sauce of your choice (something lacto-fermented would be extra fun)
Combine all of the tahini ingredients together in a mixing bowl and whisk them to combine. Set them aside.
Bring water to a boil and add in a cold egg from the fridge. Boil it exactly as long as you want it (I like 8 minutes for this application) and prepare a bowl of ice water. Once the egg has been in for the allotted time, shock it in the ice water and let it sit for at least 15 minutes, then peel it and cut it in half.
Season the rice with salt and lemon, then divide it between two serving bowls.
Arrange some chickpeas, between the bowls. Then add the sweet potato, cucumber and avocado. Combine the carrot, cabbage and herbs in a bowl and toss them with dressing and season it with salt. Add it to the bowl, followed by the egg. Spoon the dressing, to taste, over all of the ingredients and then finish it with hot sauce if you desire.
