A Grass, Fire, Water core isn't necessarily good because of the interactions between the three types, but because the three types cover EACH OTHER'S weaknesses.

Grass types take care of water, ground and rocks types for fire and resist the electric and grass attacks that would hit water. Water types resist the fire types for grass, and also provide options for hitting fire types plus the aforementioned ground and rock that might stand in the way of a fire type's usually offensive pressure. Fire types resist fire and grass to save the other two parts of the triangle, but also manages to hit bug and ice types that threaten grass and the grass types that threaten water.
That's how a core works.

Heatran ting Lu and gyarados
Between the three they resist/ are immune to every type in the game, and you have gyara intim for physical attackers and vessel of ruin for special attackers, seems like a good defensive core.
