When I started getting an aversion to eggs I started adding cottage cheese into my scrambled eggs and it was a game changer. Changed the taste and texture just enough to love eggs again. The flat bread was great too

I bought a Creami 2 years ago. I tried and tried to get the recipes from the booklet to work. They used cream cheese and it always turned to butter. Once I saw your cottage cheese icecream recipe I used it to start filling my Creami containers. I make a 'dirty Keto" salted caramel using 220g cottage cheese, 30g Allulose, 30g of Jordan's Skinny Mixes Sugar Free Salted Caramel Sauce per 1 pint container. Then fill to juts below the line with Heavy Whipping Cream. Freeze for 12-24hours then spin once on Lite Icecream, once on Respin and then hollow the center and add chopped pecans. Then spin on Mixin. It is good. I put the leftovers back in the freezer, but do not respin once the pecans are in. Just sit on the counter for 15-20 minutes and it starts to soften. I gave my recipe to my cottage cheese hating neighbor. He liked it so much he bought a Creami! THANK YOU SO MUCH FOR THE ORIGINAL RECIPE! ❤

I can understand the aversion some people have to eating cottage cheese straight up. We all have our preferences and dislikes. But why anyone would have an aversion to using it in recipes is puzzling to me. Examples, no one likes raw eggs straight up, or heavy cream alone as a beverage, or raw flour of any kind as a breakfast food, or garlic cloves as a snack. Yet all of those are used in recipes without much concern for the final outcome. Cottage cheese is no different when used as an ingredient and not eaten alone . 😉👍

iv been making cottage cheese ice cream this last week. I have found that results depend n a few things
1) use a food processor and DO run it for 4 to 5 minutes with all the ingredients, except last minute mix ins.
2) use 1 tablespoon of either liquid allusose OR vodka to prevent the desert from getting icy.
3) use granulated allulose for the sweetener. ( about 6 tablespoons to one cup of cottage cheese. )
4) do add 1/2 or teaspoon of vanilla extract to ALL flavors.
5 Approx one cup of fruit ( freeze cup up fruit ) to one cup of cottage cheese. A touch of salt helps bring out the sweetness.
6) freezein an air tight container. I break up the clumps as it is freezing, every couple of hours. It DOES scoop out well. I also use a fork to scrape it into piles, then smash those piles into the scoop. It gives the frozen desert a bit of air.
The first mix i the food processor IS VITAL. If its not totally smoothe, the end results do suffer.

A great way to keep ice cream from freezing too solid is to add a small shot of vodka in it when you’re making it. This keeps it soft because alcohol will not freeze.🎉

For the frozen dessert, if you like it except for the iciness, try using allulose as the sweetener, and adding 1/4 teaspoon of tara gum. I have used that with great success to make icy frozen desserts nice and smooth.

This morning I tried the cottage cheese tater tots recipe you tried. I wanted to see if it would fry as hashbrown patties. I had to add some egg white powder to get it to stick together. It wasn't hashbrown like, but maybe closer to a potato pancake texture.

Flatbread works great as a pizza crust. I added in garlic, onion, salt, & Italian seasoning, cooked it completely then added toppings and popped back in the oven to toast everything up.

I NEVER wanted to even try cottage cheese! But the cottage cheese chips made me a believer. Sometimes I use almost a cup without any potato flakes and make several batches.I eat them all and call it lunch! Keeps me full for hours. In my area and with my microwave Kroger brand works best. Some other brands splatter the inside of my microwave. Keep trying them until you get the right combo for your microwave.

Hey! A different keto cooking channel recommended adding 1/4 teaspoon of Tara Gum powder to keep the ice cream very smooth and creamy no matter how long it is in the freezer. Just a thought, haven’t tried it myself. But maybe it will keep the cottage cheese ice cream from becoming icy in the freezer?
