My Version of Chicken Riggies

Living in Upstate NY, Chicken Riggies is a staple of cuisine there. My version I use what is available on hand and quick rendition of the famous recipe.
Ingredients:
2-3 lbs of chicken boneless and skinless
1 onion cut in quarters
about 10 cups of water (enough to cover chicken)
2 tsp of garlic powder, onion powder, minced garlic
1 tsp of salt and pepper
1-2 cups of diced peppers and onions (frozen is fine)
1 tsp of garlic
1 tbsp of olive oil
1 box of Rigatoni Pasta
2 jars of Vodka Sauce ( Bertolli Sauce)
Directions:
You can use any part of the chicken. However, if you don't want to cook the chicken you can used cooked chicken from the store but make sure its Original Rotisserie Chicken.
Add chicken to the pot of water and add your spices and onion. Stir on high heat until a boil. Lower the heat to medium high heat and cook for at least 45 minutes (longer for bone in) or until fully cooked.
Take out chicken to a bowl to cool. You can shred or cut the chicken into 1/2 inch cubes. (Your preference)
While your chicken is cooling, in a large saute pan add your oil and garlic and let that cook for a minute or 2. Then add your peppers and onions. Cook until softened (3-5 minutes).
Take your pepper mixture and put to the side.
Prepare your rigatoni pasta as per the instructions on the box.
While your pasta is cooking you can shred or cut up your chicken and set aside.
When your pasta is done (Al Dente), drain and return to pot. Add your chicken, pepper mixture and add your sauce.
Stir your ingredients until fully mixed. I like to add a bit of water to the sauce jars to get the rest of the sauce out of the jars.
Let it cook all together for 5-10 minutes on medium high heat so all ingredients are nice and hot.
Time to Serve:
You can serve this with a salad and garlic bread. You can top this with shredded Italian mix cheese or with mozzarella cheese or Parmesan cheese. What ever you prefer!
This takes about an 1 1/2 hr or less if you buy store bought chicken.
