I wish they would explain the red shift and give some equations and figures to show how it all fits together. What units do they work in. eg the z11 galaxy has a red shift of 11 but what are the units?

There is no edge here. Invoking the word "edge" regarding space/universe implies an end point. No endpoint. It goes on and on forever in one form or another whether it be galaxies or empty space or munchkinland etc. The universe goes on and on.

Where does it stop, a brick wall? And what's behind the brick wall? Or does the brick wall go on and on forever? It's endless brick wall.

There is an edge to the table you might be sitting at. There is an edge to the refrigerator. There's an edge to your smartphone, yes, but no edge to space/the universe.

An "edge" to our known viewable galaxy clusters is a more apt and accurate statement.
