Angelo's Mom Makes Calamari

My mom's Greek recipe for making calamari (squid):

3-4 packages of frozen squid
Olive oil
1 cup wine (whatever wine you like; she says avoid cheap ones made for cooking)
2 cups tomato sauce
1 bunch parsley
1 large pan
1 spaghetti strainer

Put a large pan on the stove and set the heat to simmer. Put in the frozen squid with no oil and let it warm up. As they warm up the water will drain from them. Pour the calamari into the strainer and let the water drain out. Put the calamari back into the pan and let more water drain and repeat with the strainer. My mom did this three times total, but do it as much as necessary.

When you're done draining water from the calamari, pour olive oil over it in the pan-as much as you like. Chop up the parsley. Then pour one cup of wine (my mom used a Zinfandel), two cups of tomato sauce, and dump in the parsley. Stir it thoroughly, put the lid on it, and let it cook at a simmer for 1 hour to 1 1/2 hours, stirring occasionally so that it doesn't stick to the pan.

I managed to mostly behave during this video, though my mom didn't like me sneezing or belching. And she seemed to go into a trance at how good the finished recipe was, which she made with spaghetti that had basil, garlic powder, and garlic salt. It actually was good. I had two bowls of it.

what i liked best was the prayer your mum made at the end-theres nothing good without Gods blessing.thats why the food made in the monasteries is one of the best.

Hello Angelo's mom, you're hysterical, cute too. I'm ITALIAN and wanted to let you know I've made my calamari the same as you did. I've fried it, and cooked it in the sauce. So it's not only the Greeks that can make it. I'm 79, thanks for making me smile. Hugs
THANKYOU ANGELOS MOM. ❤

i would add lemon, but that's the only change i'd make. i've never seen calamari that tender! my mouth is watering and i am drooling. also, it's a very very easy recipe to follow. i will definitely be cooking calamari soon.

I can vouch for the long, lengthy process of cleaning fresh calimari (squid). However, it was well worth the effort. The recipe was for a calimari pasta salad to be served cold. I loved it. My best friend, however, couldn't handle the tentacles which were, in the recipe, for garnish atop the pasta salad with the calamari body into "rings" within the pasta salad itself.

Love, love calamari. Where do you purchase frozen calamari? I've never seen it frozen. I have always used fresh from fish monger such as Dekalb Farmers Market, Decatur, Georgia. Keep your videos coming.
