I have a very good friend who is Polish, she gave me her recipe for Pierogies, the dough is so soft & tender, the filling she made her's with is potatoes & cheese mainly, also saurcraut, some make theirs with dry curd cheese, I am not picky I just love them with cheddar cheese & potatoes.Other nationality's have their favorite fillings, I think mine is very close to Polish as it was her mothers recipe, My friend is in her 80's now am very blessed to had her teach me many things, I have made sourcraut, dills, I did pass on Duck soup tho Marta.LOL I learned the secret to the dough, that its easier to roll if you let it rest, I let mine set overnight, thats what I was taught & it works for me .NOW my mouth is watering .

My polish family also made these perogies with Sauerkraut and mashed potatoes browned in a frying pan after they were boiled. Then served with melted butter. I still make these today. My daughter also makes these from our families recipe.

I always liked Martha Stewart, now I know why. 😊 My personal favorite style of pierogi is stuffed with Kapusta. ( a sour cabbage very similar to German sour kraut ). ...After boiling them, sautee the pierogi in butter in a frying pan until golden brown and tender, serve with kielbasa on the side, and maybe a nice hot bowl of Polish barsz/ zurek and some hard boiled eggs along with fresh baked polish rye bread. Amazingly delicious!!! Thank you Baci for all the happy childhood Christmas and Easter memories.

I'm half Polish and I'm the only one who makes pierogi's now! My favorite is the sweet cabbage, but I love the blueberry pierogi with cinnamon and cream 🤤🤤 My Dziadek and Babcia loved them! I also love the mashed potato and the mushrooms! One time I tried to deep fry them, but half of them fell apart 😱 Still good though

Martha's mom was a tough lady who instilled the best qualities in her children because they didn't grow up with a lot. Martha's kids look like they've never been near a kitchen before

That's a pretty fancy recipe you've got there ;) Traditional pierogi dough is only made of water, salt and flour, egg is optional - my grandma taught me not to use precise measurements but to be able to remember the texture - too wet? Add flour. Too dry? Add more water. Also, there are numerous fillings - from cabbage and mushrooms to strawberries, but the most popular are ruskie pierogi ('russian pierogi') with white cheese (not-so-creamy cream cheese) and potato filling, mashed and mixed with fried onion, salt and pepper. Some eat it with sour cream on the side, some prefer to use butter or leave them as they are. 
To finish, a fun fact: 'pierogi' is plural, the singular is 'pieróg' and is pronounced 'pye-roog'. So no 'pierogis' - either 'pierógs' or 'pierogi'. :)

The girls made faces about the butter, the salt, and the cream cheese, and even said "ugh" at all the salt. That generation doesn't want to eat all those calories, but they are delicious! Nice job 'Marta'...

I remember the show where your mom was a guest and she made pierogis. I never forgot her recipe or her instruction that you roll the dough 3 times and the 4th time you roll it, you cut it in strips for noodles. Because now the dough has been played with and has toughen up too much to make the tenderpierogi. I loved watching your Mom and after my mom tasted these! I made them several times a year and froze thousands! God bless your Mom. Thank you.

this recipe is very different how my babcia makes it, she actually added dried  wild mushrooms we collect in the forest and just adds them to hot water to make them fresh and mixes with the cabbage that's she sautés with onion and other spices and herbs, she doesn't make the dough that way either and doesn't add cream cheese. Ruskie pierogies she adds farm cheese and potatoes inside, my fave is the meat ones

For any English people wanting to try pierogi. Dough made with flour, salt and warm water. Filling 50/50 corned beef and cabbage. Beautiful. Frying optional. Polish cooking is not about complicated recipes but a well followed process

Martha, visit Warsaw and Krakow now and be amazed by the changes. It would be difficult to find a traditional Polish restaurant in Warsaw unless you go to touristy spots, lol.

mniam! I'm 100 % Polish and that is the way my Grandma used to do pierogies :-) Of course ther was no creamy cheese in Poland that time but she minced kind of cottage cheese ( twarog) to get this creamy consistence.
