Chicken Tagine with Preserved Lemons

A delicious Moroccan classic chicken Tagine. It's both an everyday meal for Moroccan families but also served in engagement parties, weddings, and of course to uninvited guests !!! Chicken, saffron, and preserved lemons. It's a tagine you can smell from miles away !!!

Ingredients:
2 Chicken Legs (400g / 0.9 lbs)
4 Tbsp Olive Oil
8 g (2 tsp) of Butter
Pinch of Saffron
1/2 Preserved Lemon
2 garlic Cloves
2 Small Onions
5 g (1 tsp) of Parsley
5 g (1 tsp) of Cilantro
1/4 tsp Salt
1/2 tsp Pepper
1 tsp Ginger
1 tsp Turmeric
1/4 tsp Cinnamon
2 Medium Potatoes (250g)
150 ml (5 Fluid oz) of hot water
15 Green Olives for cooking
7 Green Olives for decoration

I made your recipe. Turned out good! Added some raisins and apricots to balance the lemony flavor. Me as a south Asian background will need to add jalapeño next time.

Good job bro!
Just one tip. I would not use the Oliver oil in the beginning. I would let my children to release all the water and then add Oliver oil for the chicken to soak it.
Overall, You are amazing chef.

Pro tip: if you want your knife to stay sharp, turn it over and use the top edge to slide food across the cutting board.
