5 INGREDIENTS are all you need for this tasty Orange Chicken Rice Bake 🤩🍗

Serves 4

INGREDIENTS

1 cup Spekko Saman White Long Grain Rice
6-8 chicken thighs
1L chicken stock
½ cup cake flour, sifted
1 cup freshly squeezed orange juice (store-bought orange juice also works)
Salt and pepper, to season

Serving suggestion
Fresh side salad
Orange zest
Fresh coriander

METHOD
1. Preheat the oven to 180°C and grease a medium casserole dish.
2. Rinse the Spekko rice under running water until the water runs clear. Pour the uncooked rice into the base of the greased casserole dish.
3. Arrange the chicken pieces on top of the rice and sprinkle with salt and pepper.
4. Whisk together the chicken stock and the flour until lump-free. Add the orange juice to the stock mixture and whisk to combine.
5. Pour half the stock mixture over the chicken and rice until the rice is fully covered. Ensure the chicken is only halfway covered in the liquid. Cover the dish with tin foil and bake for 1 hour.
6. Remove the tin foil, add more of the stock mixture and allow to bake, uncovered, for another 20 minutes, until the chicken is golden and cooked through and the rice is tender. *Chef’s Tip: Once the tin foil is removed, baste the chicken with the sauce every 10 minutes to ensure the chicken stays juicy.
7. Grill for 10 minutes for really crispy skin.
8. Garnish the sticky orange chicken with fresh coriander and orange zest and serve with a side salad. ENJOY!

Today we're doing attempt 2 at this recipe. The previous time it was inedible because I tried to adjust the amounts to just my husband, I and our picky eater son and in doing so I messed up all the amounts. I also believed I didn't have enough orange so I added lemon. I also didn't cover with tinfoil.... anyway I'm trying again today, wish me luck
