Chili Cheese Focaccia
Ingredients:
250g bread flour
210ml warm water
5g instant yeast
4g sugar
5g salt
1 tsp Olive oil (plus more for drizzling)
1 Anaheim or poblano chili pepper
½ c sharp cheddar cheese, shredded
Flaky sea salt
HOW TO
1. Preheat oven broiler to high. Place chili pepper on a broiler-safe pan and broil until skin blisters about 3-5 minutes. Flip the pepper over and repeat on the other side. Remove from oven and place in a bowl covered in plastic wrap for about 5-7 minutes to sweat off the skin. Carefully peel the skin off the pepper, and remove the stem and seeds. Chop into small pieces and set aside.
2. Add warm water, sugar, yeast, and 1 tsp olive oil to a medium bowl. Whisk to combine. Add bread flour and salt. Stir to combine. Cover with a clean kitchen towel and rest for 15 minutes. After 15 minutes, wet your hands with water. Grab one side of the dough and fold it into the center repeat on the remaining sides. Cover with the kitchen towel and rest for another 15 minutes.
3. After the 2nd 15 minutes, add chopped chilies to the dough. Wet hands and repeat the folding process. Cover with a kitchen towel and let the dough rise in a warm spot for 90 minutes. It’s ok if the chili’s aren’t evenly dispersed in the dough. It’ll all work out in the end.
4. Drizzle about 1TBS of olive oil into an 8x10 pan and carefully turn out the risen dough into the oiled pan. Wet your hands with water and pull one end of the dough into the center. Repeat with the opposite side. Flip the dough over. It should look like a burrito. Cover the dough with the kitchen towel and allow the dough to rise for another hour and a half.
5. Preheat the oven to 430 degrees and adjust oven racks to the lower third. Remove the kitchen towel, it’s ok if the dough hasn’t taken up the entire size of the pan. Drizzle a little bit more oil on top of the dough and press your fingers into the dough making dimples throughout the dough. Sprinkle cheese along the sides of the pan for a cheese skirt and fill in any gaps with the remaining cheese.
6. Bake the focaccia in the oven for about 18-20 minutes until just starting to turn golden brown and the cheese is melted. Remove from the oven and allow the bread to cool on a wire cooling rack for about 10 minutes before removing from the pan.
7. Remove focaccia from the pan and enjoy with your favorite bowl of chili, soup, or on its own!
