Chinese baijiu cocktails in the old alleys of Beijing

Baijiu's reputation precedes it in the Middle Kingdom. Its sharp taste and high alcohol content -- coupled with a history of people expressing generosity by enthusiastically persuading guests to have more -- have led to a bit of a fearsome name for the spirit. But baijiu is the most widely consumed hard liquor in the world, and that many people can't be wrong, right? I'm hoping to ease into it gradually though...so I stopped by a bar that's encouraging people to experience baijiu in a different way -- in the form of the mighty cocktail.

This is a segment from an episode that aired on the TV show Travelogue: "Raising a Glass to Beijing's Bars." We're exploring unique watering holes that represent China's evolving liquor and wine culture 🍸

Baijiu is so tricky to work w. Thank you for sharing!! Lemon, bitters, and clearly egg white in that first one.

This is a great series that can help people learn more about modern-day China.

Wow baiju with a chocolate taste... I need to try that LOL. I always thought of baiju as pure rubbing alcohol that old timers get wasted off of. Were you feeling the effects after?
