Where Japanese Caviar is made — Kobayashi, Miyazaki

Japan is not well known for Caviar, the sturgeon fish are quite famous in Russia and the Caspian Sea but it was in the 1980s that Kobayashi City in Miyazaki worked with Russia to try to farm them for Caviar.

Why in Kobayashi?
It has some of the cleanest water in the world, spring up naturally from the ground, the water filtered by the sand making it ideal for raising sturgeon known as Chouzame (蝶鮫 or チョウザメ) in Japanese.
They successfully bred them to make Caviar in 2004 (平成16年) and Kibayashi is now exporting the caviar around the world. I’ll introduce you to the sturgeon and location as I scout it out for another episode.

The Sturgeon in the Columbia river in Oregon get to be over 15 ft, I've seen one drag a pickup truck into the river off a gravel bar when a fisherman tied his fishing line off to the truck cuz he got tired of fighting

Sturgeon were so prevalent in the Hudson River that they were known as "Albany beef" in the 19th century.

The sturgeons are herbivore, they eat weed at the riverbed mostly. This kind of fish is very ancient. Before the industrial revolution, the sturgeon was actually a common fish in the Russian Empire and its meat and caviar was food for peasants.

I say caviar the same way you do... maybe I’m wrong too but I’ve never heard it pronounced any other way 🤷🏼‍♀️

Are they already able to harvest the caviar without killing the fish? Usually they'll have to cut open the belly to get the caviar and kill the fish in the process.

One of the places I'm looking to buy SAlmon/Roe has their own Ikura from Salmon. My issue with this place is it looks like a fish farm operation, which is not good for the fish, or is the meat good for us humans!

It seems Japan has to work on their laws, it's quite sad. You do mention that the water is "clean" but is that "Clean water" being pumped into those tanks constantly in order to allow the fish proper breathing/living conditions besides the extremely small space?
