Eddie really wanted me to veganize a childhood favourite of his: Tuna casserole! I make this dish with chickpeas and nori to add a bit of that fishy flavour to this ultra comforting dish.

♡ What does your logo mean? Why isn't your logo using the Vietnamese flag? - Actually I use the South Vietnam flag because it represents Viet Kieu (Vietnamese immigrants after the fall of Saigon), my parents were both boat refugees before immigrating to Canada. My logo combines two parts of my identity: Maple leaf because I'm Canadian, and the South Vietnam flag because I'm Vietnamese :)

I used to love tuna noodle casserole! My mom would always top it with Lay's potato chips and cook it in the microwave lol. I have been wanting to improve her old recipe for a while now so thanks for the inspo!

I like to make a homemade cream of mushroom soup and it as the sauce. Definitely add Ritz crackers along with some butta! Lol

I've never been a fan of tuna casserole but since I like chickpea tuna I think I'll try it.

A couple months ago I was preheating my oven and forgot there was a couple boxes of Triscuits/ Ritz crackers and a box of cereal in there. Almost started a fire! Glad I'm not the only one that forgets stuff like that. Also had to laugh at

I ate a lot of tuna casserole growing up. The best topping is always plain salted potato chips with ridges (gotta have the ridges). But there are so many good potential casserole toppings (for various types of casseroles): tater tots, crumbled Ritz crackers mixed with butter, bread crumbs, chopped up biscuit dough, stuffing, polenta, corn bread batter... I don't think I've tried saltines yet though, that'll have to be on my next casserole, lol.

that's very tasty!!!
i've marinated chik'in vegan chicken with the nori sheets several sheets for extra flavor, crumbling the nori crush the nori Very well and mix with the chik'in meat,
after about 7 hours of marinating it tastes very much like seafood

sour gherkins cut small are a great addition perhaps in place of the celery.

Was feeling a little under the weather today and needed some comfort food. This was perfect! I cut the batch in half and used potato chips on top and it was great. Thanks for the recipe, it will definitely be made again.
