Gta 5 will be one of the easiest games for the switch to run. Even a pc thats weaker than a switch can run it smoothly.

They could use an older build like the 360 or ps3 version and yeah just mess with the graphics and sound a little bit, add a little bit of new content/guns/cars/clothes. Idk maybe it would be like Gta V Classic Edition or something and knowing Nintendo theyd probably throw a mario T shirt in there as a purchasable item from the store

Witcher 3 runs in Switch which is released in 2015 while GTA V is released 2013 so it's really capable of running it

It did start life as a PS3 and 360 title so if it was based on those versions i'm sure it would be fine.

The problem would be the Online mode because i highly doubt it would have crossplay so would likely need its own server or they would just not include the mode. Would Rockstar even bother releasing it if they couldn't do online?

In switch when you get fortnite and rocket league they tell exemple when you download fortnite they say it cause of rocket league. Imagine they do Gta 5 who is more (Go).
