Pineapple Tart / 风梨酥
Recipe:

Wet ingredient
240g butter, room temperature
50g icing sugar
1 egg, room temperature

Dry ingredient:
200g all purpose flour
200g cake flour
30g g cornstarch
1/2 tsp salt

Filling ingredients:
400g Pineapple, finely chopped or blend
3 tbsp sugar
3 tbsp brown sugar
1 star anise
1 cinnamon stick

Other:
Egg wash

Method:
1) In a bowl add in wet ingredients, beat the mixture till fluffy. Add in the dry ingredients and mix until just well combined, then knead into soft and smooth dough. Cover and chill the dough for about 30 minutes.

2) Meanwhile prepare the jam for filling. Add all the filling ingredients into a pot. Cook over low heat & stirring occasionally to prevent sticking to bottom. It takes more than 1 hour.

3) Let the filling cool down completely and rolling the pineapple jam into thumb size log, each weighed about 15g. Cover and chilled till used.

4.) Next put in some dough into the cookie press, press the dough on a clean surface.

5.) Place a jam log and carefully wrap the filling and gently roll the dough. (Watch video)

6.) Cut the excess dough and place the dough on a prepared baking tray and brush with a thin layer of egg wash.

7.) preheated oven bake for 20-25 minutes or until golden browned. Let it cool completely before store in an air tight container.
