What is so unique about the emergency exits on an EasyJet Airbus A319? 
If you look closely at an Easy Jet Airbus A319 compared to any other A319, you might spot the difference. The EasyJet Airbus has two over-wing exits on each side, but the normal configuration only has one on each side. Hats off to easy jet for paying millions by adding the extra emergency window, which will save time during an evacuation!

That is wrong Joe, they have it because the number of passengers of their high density layouts required an additional egress possibility. It is a certification requirement.

I'm guessing they were required due to seating density probably more closely matching the average A320.

I'm going to go out on a limb here and say that EasyJet did not invest millions to improve safety. There must be a simple reason for this.

The 737 Max 8-200 has an additional set of exits as well, to comply with regulatory requirements for its high density configuration.

Eurowings and Allegiant also have 8-door-A319. EWG has some that can't be used EZY planes because of the different engine type they use.

All of Allegiant's 30+ A319s have 2 on each side as well; as will any high-density A319.

Also, it's not done for passengers being able to exit faster, it's done to allow a higher seating density, the single overwing exit version isn't certified for more than 150? passengers

EasyJet just wanted to make more money by packing more passengers. They would probably put another 10 exits if they could pack passengers in layers.

Not specific to EasyJet, for example Eurowings on their A319 (ex. Germanwings) has two overwing exits as well. As others have pointed out this is due to the more dense seating layout
