To be honest. If they just made Amy or Metal Sonic playable day one from start to finish of the game. I'd buy it but yeah it's always having to mod it rather then buy it...

Knuckles would have been awesome in CD due to how big of a focus exploration is in that game

These 4 specific games have been re-released countless times. A few animated cutscenes and minor sprite touch ups isn’t worth it. (A good emulator, the roms, and some HD romhacks will do you much better.)

Outside of the animated cutscenes, I didn't really see very much that appealed to me, given that we already have the Whitehead ports of 1, 2 and CD, plus Sonic 3 A.I.R. Only really having a playable Amy, and possibly a nice Japanese physical release would have gotten me to part with my money. Also the fact that you cannot tweak Anniversary mode to how you want to play is puzzling as well when you consider that in Sonic Jam you could

Turn on the spin dash in Sonic 1 (or not)
Set the difficulty level (Easy, Normal and Original) for all four games (1, 2, 3&K)
And turn off the time limit

All this was possible in 1997 and one can't help but wonder why we can't do this in 2022.

Also if fans could mod Amy and Knuckles into CD I fail to see why they can't be playable in Origins' version of the game.

The only thing that's disappointing to me is no Knuckles in CD. I didn't expect playable Amy or Metal Sonic. That would be really cool, but probably asking for too much.

Just FYI, the preorder bonus is insignificant. You don't need 100 bonus coins, you can unlock Mirror Mode yourself, and the "letterbox background" (whatever that means) is included in one of the DLC.
