On a 15 day brine, i think i would be taking one of those multi-bladed meat tenderizer punchy tools to get the brine in deep quicker, punch those every few days. Plus, it'd help the meat tenderize. That's what they do in the big meat packing plants, to get that mixture deep into the meat.
