Ratlami Sev | Sanjeev Kapoor Khazana

This lip-smacking and spicy sev recipe is the perfect accompaniment with a nice warm cup of masala chai.

RATLAMI SEV

Ingredients

3 cup besan
2 teaspoons clove powder
½ teaspoon garam masala powder
½ teaspoon ajwain
Salt to taste
4 tablespoons hot oil

Method

1. In a bowl take besan, clove powder, garam masala powder, ajwain and salt. Add sufficient water and knead to soft dough.
2. Grease the chakli press with oil which is fitted with sev attachment, put a portion of the dough in it. Seal the press and deep fry till crisp.
3. Drain on an absorbent paper, allow to cool. Crush and serve.

I am from Ujjain and I had the original ratlami Sev many times as it is very famous there... But currently living in Gujarat so we bought the pack of ratlami Sev but it's taste was lil different so my dad told the uncle to use more spices to get the actual flavour and uncle told that they even used the water of ratlam to make that Sev but still there is not that type of taste in it.... Once in your life you shld once try the original ratlami Sev, it's too delicious ❤❤
