Southern Italian Peperonata!
In this episode of "Italian Express", the short & sweet (well... not literally 'sweet') videorecipes by Italian Food Boss, I'm going to show you how to cook sweet peppers in a rustic tomato sauce. Phenomenal taste for an incredibly easy dish to make!

Peperonata - RECIPE
Prep Time: 15 mins
Cook Time: 50 mins
Complexity: Easy
Ingredients (4 people):
3 peppers
700 ml Tomato passata
1 handful black olives (pitted)
1 handful capers
1 onion
basil
1/2 glass white vinegar
olive oil
salt and pepper
Procedure:
1) Get rid of the seeds from the peppers and cut them in stripes;
2) Chop the onion roughly and 'sweat' it in hot oil;
3) Add the peppers. Let them cook at medium heat, lid on, for a few minutes;
4) Add the white vinegar. Lid off, let the vinegar evaporate, then add the tomato passata;
5) Add some basil leaves, some olives and capers;
6) Stir continuously and let it cook at VERY low heat for as long as you need (and like);
7) ENJOY!
ITALIAN FOOD BOSS SPECIAL TIP: Don't forget to add the white vinegar to the mix: it'll make the difference between a REAL peperonata and a fake one!
