Peperonata is an Italian recipe that consists of sweet peppers (we used red and yellow bell peppers) and onions sauteed in olive oil. Once the peppers get very soft, vinegar and sugar can be used to improve the tangy/sweet ratio of your peperonata. Oh ya! The food you cook at times looks fairly complicated but after further review, it’s really not! You let the ingredients do the talking and that’s what Italian cooking is all about! I used to spice and season my sauce till I killed it! Boy have I been missing out!! Thanks for another great video!!

Late summer ritual Sunday dinner: Pepperonata with grilled ring sausage and a green salad with some cubed cold boiled potato and oil and vinegar. For the pasta to start, pasta ala Norma. Some red wine and good Italian bread to clean the plates.

Hi Jim! Oh this is wonderful! I used to have a HUGE veg garden. I still have a small herb garden and grow basil on my front porch in pots, but I want to start growing a few things again next season! Peppers for sure and maybe some lettuce. Thanks for sharing!

Riffing on the Pepper and Egg idea, I bet you could also make some divots in the peperonata and poach eggs in it like a sort of Italian take on Huevos Rancheros or Shakshouka.
