In today's video I'm gonna be sharing with you 3 easy, healthy and vegan snacks for this holiday season :)

My Equipment:
*INGREDIENTS*
#1 Sweet Potato Gingerbread Energy Bites:
1/2 cup roasted sweet potato (~100g)
12 dates, soaked in water for at least 40 min
1/2 cup walnuts (~ 60g)
1 Tbsp cocoa powder, unsweetened
1 1/2 Tbsp flax seeds
1 cup + 5 Tbsp oats (85g + 5 Tbsp)
1/2 tsp vanilla
1 tsp gingerbread spice* (or pumpkin pie spice)
*alternatively use 1 tsp cinnamon + 1/4 tsp ginger, dried
**this makes for about 16 - 20 balls
#2 Pumpkin French Toast Sticks
2 -3 pieces of toast
1/2 cup plant based milk (I like soy or almond) (125ml)
1/4 cup pumkin purée (~60g)
1 tsp chia seeds
1/2 tsp vanilla
1/2 tsp pumpkin pie spice
a bit of vegan butter or coconut oil for the pan
frosting:
2 tbsp vegan cream cheese
2 tsbp vegan yogurt
1-2 tsp maple syrup
#3 Winter Green Smoothie Bowl
1 frozen banana
1 persimmon
2-3 dates
1/2 cup frozen spinach or kale (~50g)
1 tsp chia seeds
1/2 tsp cinnamon
1 cup plant based milk (more for a thinner consistency) (250ml)
toppings of your choice
