Aw. Ebbers’ final meal is based on his and James’ special dinner together in Portland. And James’s is based on their Japanese meals & the birthday cake he cooked for Ben. That’s actually very moving, and shows how much love & respect all these guys have for each other.

Ben: James has amazing discipline
Also Ben: I brought this from home! I foraged this wild garlic, washed it, blanched it, made it into frozen pellets. Then I picked garlic buds and lacto-fermented them.

The magic of Sorted isn't the food or the recipes or the skills. It's the genuine friendships that come through very clearly in the videos. There's a real sense that they are all having fun hanging out with their friends and, oh by the way, getting paid for it. I'm sad to see James leave but I actually feel worse for the rest of the team at Sorted because they're losing a friend not just a chef.

I’m turning 30 in a few days and I can still remember watching Sorted in my college dorm a decade ago. Y’all gave me the push to follow my dreams and go to culinary school and become a chef.
