INGREDIENTS
Red onions
1l white wine vinegar
1l water
200g sugar
200ml olive oil
10g salt

METHOD
1. Peel an onion. Cut off both ends and remove a few layers from each onion.
2. Pour water into a pot, add sugar, and mix.
3. Add vinegar and bring to a boil. Put all the onions in the water and cook for 5 minutes.
4. Remove the onions. Add oil and mix.
5. Place the onions in glass jars. Fill with liquid from the pot.

I am wondering why add the oil ? If you want them to keep a crispness you can add some mustard seeds and a bay leaf to each jar. The tannin will keep them from getting too soft, and eventually mushy.
