The rarest item is 'thing' banner made from enchanted apple, green dye(from desert cactus) and brown dye (from jungle cocoa beans).
This requires hunting for enchanted apples and exploring to find desert and jungle

Actually the rarest item is the glow stick they're in a education Edition but they spawn in a very rare place in a chest where you can find two of them they use black and purple if you don't have education Edition. Even in survival.
