Berry Pavlova Cake Recipe | How to Make Pavlova

This Berry Pavlova Cake is the best summer dessert I've ever tried. It is a meringue base with a crisp crust and soft, airy inside, topped with fresh berries and whipped cream.

INGREDIENTS
4 large egg whites, room temperature
⅛ teaspoon kosher salt
2 cups icing sugar
2 teaspoons cornstarch
½ teaspoon lemon juice
1 ½ cup heavy whipping cream
1 teaspoon vanilla extract, optional
¼ cup almond petals or pistachios
2 cups mixed berries, such as raspberries, strawberries, blueberries, cherries or blackberries

PREPARATION
1. Preheat the oven to 305°F (150°C). Line a baking sheet with parchment paper, draw two 8-inch (20cm) circles, flip over and place on the baking sheet.
2. Using a mixer, beat egg whites with salt until foamy. Gradually add icing sugar, and continue beating for about 7-10 minutes until glossy and stiff peaks form.
3. Add the cornstarch and lemon juice and gently mix with spatula until combined.
4. Divide the mixture evenly between the two circles and use a spatula or spoon to spread the meringue.
5. Bake about 30-45 minutes or until slightly golden.
6. Remove and let cool completely.
7. Beat the whipping cream until soft peaks form.
8. Gently place one of the meringue on a serving plate. Spread half of the cream and sprinkle with almond petals and fresh berries.
9. Place another meringue layer on top, top the remaining cream and sprinkle with berries, almond. Decorate with mint leaves if desired.
