Greek traditional spinach pie, the king of all the pies! My yiayias recipe, exactly the same way she was making it at the village with fresh ingredients from her garden! The phyllo is store-bought but is the @zagorisiofillo phyllo which is exactly the same as the homemade version I have shown you ( it just makes our life easier) for more Greek recipes click the link in my profile, you will also find links for the products I use in my everyday cooking

• ingredients:
- 12oz (0.75lb), 340gr spinach
- 2 diced onions
- 2 bunches diced scallions
- 1 egg
- 1 bunch of spearmint or mint
- 1 bunch dill
- 1/2 a bunch parsley ( optional)
- 2tbsp Greek yogurt
- 2 cups or as much as you want feta cheese
- olive oil measure with your heart or as much as needed
- 2 packs zagorisio phyllo dough or thick homemade phyllo dough about 8 sheets
- very little milk to sprinkle over the pie
• instructions:
- into a large bowl add the spinach, mint, onions, scallions, egg, yogurt, feta, dill, parsley, and salt if you like as well, and mix very well by squeezing the spinach ( will take out all the excess water)
- into a greased skillet add 4 phyllo dough on the bottom creating an envelope( half in, half out )
- oil each phyllo, then add 1 phyllo at the bottom and center of the skillet and oil again
- add about 2 handfuls of the spinach filling and spread it evenly everywhere
- add a phyllo over the spinach to cover and oil again, and add about 1 handful of the filling and cover it again with 1 phyllo and add the last handful of the spinach filling
- start covering the spinach with the phyllo dough that is half out of the skillet and oil each layer
- add the last phyllo dough to cover the pie ( no need to be stretched), then add olive oil and precut into pieces ( will help the pie to be baked evenly and properly everywhere without being soggy)
- last sprinkle with your handsome milk and bake at 380F ( 180C) for 1 hour
- when the spinach pie is ready let rest for about 30 minutes over the counter before you fully cut the pieces
- you can enjoy it at any time of the day
