HOMESTYLE MAHARASHTRIAN CHICKEN CURRY 

INGREDIENTS:

1 kg chicken 
3 medium onions sliced
1 cup of dry coconut grated
½ cup of fresh coconut grated  
½ cup oil
2 medium onions finely chopped 
2 tbsp each ginger, garlic paste 
1 tbsp garam masala powder
2 tbsp chilli powder
1 tsp turmeric powder
Salt to taste 
 

METHOD:

i.    Heat a pan and add the sliced onions and sauté then till they turn limp and brown and then add 2 tbsp of oil and fry them brown and keep aside
ii.   In the same pan dry roast the coconut and then cool and grind to a fine paste with the onions 
iii.  Heat the remaining oil in a vessel and add the onions and let the onions bloom
iv.  Add the ginger, garlic paste and fry for a minute
v.   Add the chicken and sear it on a high flame for 3-4 minutes
vi.  Add the garam masala powder, chilli powder, turmeric and fry for a minute
vii. Add the ground onion and coconut paste and mix well
viii.            Add 1 liter of water and cook till the chicken is done
ix.  Garnish with lots of coriander and bring to boil and serve.

My wife (she's Marathi) makes thisbthe same way, except that she pre marinates the chicken with a paste of Green chillies, lots of fresh coriander (Gauthi Dhaniya, not Cilantro), Ginger & Garlic and curd for about an hour. And no Broiler Chicken. It tastes best with country chicken, Deshi Murg, Gauthi Komdi😊
