Now that summer is here, you’ll find a bright dessert rotation featuring fruit and berries exclusive to the sunny season.

A chef would agree that a well-sourced, juicy peach is doesn’t need any help to stand-alone in a dessert menu. Whilst we agree with this, we love to see how creative chefs can get with seasonal ingredients.

Chef Vincent gives us an alternative use of a peach with his light and airy foam. This recipe begins with caramelising the fruit with ginger and sugar before splashing a bit of rum for a boozy after note. The final foam has a hint of spice that balances the sweet and an cloud like texture that can contrast other textures in a dessert!
